就用此贴作为参赛作品吧,叫花鸡的来历想必也不用说明了,大家耳熟能详。为什么是苏菜呢,因为最初是产生于江苏常熟地区。家里做用烤箱,但黄泥不好找,也不现实,就用面粉代替了,有些浪费。;A:St$zW0j4L'y

1. 嫩鸡一只清洗干净,为什么用嫩鸡呢,我想你总不会用一只老母鸡来做这个吧,浪费且不说,估计你家烤箱烧爆,肉也不见得会烂;然后用葱姜蒜,生抽,蚝油,料酒,盐,花椒(粉)白胡椒等倒在盆里,反复给鸡按摩,里里外外,上下其手,十八摸……绝不为过!这里要提醒一下,鸡要完整,先不要开膛,因为过会儿里面还要塞东西,所以这就给按摩带来了难度。然后放在冰箱腌制1小时以上,最好过夜。中间不断翻一下。

2. 干货店一般都有干荷叶卖,两张即可,用冷水泡上,别忘记清洗干净,仔细一看还挺脏的。然后和面,第一次做,我也忘记用了多少面粉了,大概有一斤半的样子吧,用冷水和面,倒些白酒进去,这样鸡烤好打开时会有酒香。和好面好用湿布盖上。

3. 泡好的香菇切丝,洋葱切丝,然后和腌鸡的料混一下,然后就把盆里所有的东西向鸡肚子里塞,塞满为止,最后用针空棉线把它的屁股缝上。S)ih0iE1q|'W[

4. 把面团分成两份,各擀成两个圆备用。 然后把鸡表面再抹上五香粉和胡椒,盘好造型,这个各位还是网上找资料看一下,还真不好说怎么盘的。放在荷叶上,荷叶比我想像中的大,一张就能包下,但还是需要两层,一张朝上包起来,一张盖着朝下包。最后把它放在两张面片间,把它封住。

5. 最后就是上烤箱烤了。家里有烤箱的就预热160度,80分钟。我家只有带光波功能的微波炉,所以烤了150分钟。烤盘上刷层油,把面团放上去。时间到出炉敲开面团,香气四溢……t5f3i1c,G9LM
