理想的牛扒应该色泽红润有光泽,最好是4度左右冰鲜的,肉较厚实,其间有云状纹理的肥油,并且这个肥油呈象牙白色。9Q8t1\j+R)e&{w

做法还是蛮简单的3T9I.s"C([%\VX2l
用红酒、迷迭香、少许海盐、胡椒粉以腌过牛扒2/3的标准腌上15分钟,然后翻个个,再腌15分钟。

热锅,一点点橄榄油晃匀锅底,然后切一块黄油下去,溶化后放入牛扒,中大火,1分钟,翻面再1分钟,重复一次,就是俺家煎牛扒的标准啦,这样大概是6、7成熟的样子。;oE/l8yj5g%b
煎的同时,一个小锅,煮开水后,烫熟小土豆、芦笋摆盘,

看见好漂亮,怎样煎可以不出水的,我平时煎都是出水的,煎出来不好吃
